  Cinnamon
 


The queen of Sri Lankan spices, which Dutch traders called ‘the bride around whom
they danced’. The plant is native to the island, and attempts to replicate the flavour
and quality of Sri Lankan cinnamon in other parts of the world have never succeeded;
other plants, like cassia, cannot equal its sweet flavor and warm character is naturally
festive, which explains why cinnamon-flavoured treats are so popular at Christmas and
other celebrations.
